Flourless Pumpkin Chia Seed Blondies

Here is one flavor-filled awesome tasting pumpkin blondie for you. Chia seeds blend well with the flavors and at the same time they provide a huge nutritional boost.

Ingredients:

1 medium ripe plantain (around 200 grams when peeled)

1 Cup of Pumpkin (around 80 oz.)

2 Tablespoons of Chia Seeds

½ teaspoons of baking soda

1 teaspoon of baking powder

1 ¼ teaspoon of cinnamon

1/8 teaspoon of cloves

¼ teaspoon of ground ginger

¼ teaspoon of nutmeg

¼ cup of coconut sugar (1 1/4 oz.)

2 tablespoons of coconut oil (1oz.)

Instructions:

Pre-heat the oven to 350 degrees.

Whisk all the dry ingredients in a bowl.

Then peel the plantain and the puree in a food processor. Blender is a good choice, too.

When pureed, add it into the bowl of dry ingredients.

Stir all and combined.

Add pumpkin puree and some coconut oil.

Let the batter be a little thick.

Scoop the batter in a pan.

The pan can be oiled with coconut oil.

Bake this for 20 minutes until the toothpick becomes visible.

 

This can be enjoyed with some chocolate sauce, cashew frosting, and protein frosting.
