Foo Foo Frittata

The word frittata is Italian for the root word “fried”. Frittata is an Italian dish that’s egg-based much similar to crustless quiche or omelettes. However, frittatas are enriched with additional ingredients like vegetables, cheeses, pasta and meats.

Frittatas are healthy treats and are relatively easy to prepare. If you want to try your luck in the kitchen, then check out this easy recipe for making foo foo frittatas.

Ingredients:
Olive Oil (extra virgin; 1 tbsp.)
Julienned onion (3/4 cups)
Purple potatoes (1/2 cup; cut into ¼ inch- cubes)
Carrots (3/4 cup; shredded)
Beet greens (1/2 cup; cut in thin strips)
Grape tomatoes (1/2 cup; halved)
Smoked brisket (1/4 cup; cut into ¼ inch-cubes)
Salt (1 tsp.; divided)
Butter (2 tbsp; unsalted)
Pepper (1/2 tsp.; divided)
Large Hamburger buns (1 pc; cut into 1/2 –inch cubes)
Large eggs (4 pcs.)
Almond Milk (1/3 cup)
Fresh cilantro (2 tbsp.; chopped)
Hot sauce (1 tbsp)
Cooking Spray (non-stick)
Cheddar cheese (3/4 cups; shredded and divided)

Preparation
Pre-heat your oven to 350 deg. F and place a glass pan (9”x9”) at the center rack.

Use medium flame and start heating a sauté pan. Add the olive oil, carrots and onions. Cook for about 10 minutes or until the onions have become a bit wilted.

While waiting for the onions and carrots to cook, place the potatoes on a microwave-safe container, cover with a plastic wrap and start cooking for 4-5 minutes or until it gets tender.

Get the tomatoes and add it to the carrots and onions; let cook for 5 minutes more. Add the brisket, beet greens, and potatoes to the vegetable mix and start seasoning with half portions of pepper and salt. Let it cook for about 3 minutes or until the greens have already wilted. Switch the heat off and place aside.

Get another skillet and place over medium heat. Melt the butter and add the bread. Let the butter coat the bread entirely and cook until it turns brown in color; about 2-3 minutes per side. Once done with toasting, remove from heat and set aside.

Procure a small bowl and mix the cilantro, eggs, hot sauce, milk and the rest of the salt and pepper.

Remove the glass pan from the oven and spray it with cooking oil. Place the vegetable mixture in the pan; it will serve as its bottom layer. Once done, add the egg mixture in; try to make it even as you go along. Add the first half of your shredded cheese and then the toasted bread next. Press the bread down so it can absorb a bit of the egg mixture. Add the remaining half of your cheese as toppings and place the pan back in the oven. Bake for 20 minutes. Remove from the oven. Let your frittata cool down prior to serving.
