Chicken Fried Rice

Ingredients:

  • 2 cups cooked brown rice
  • 12 ounce chicken breast (cut into 1/2-inch cubes)
  • 1/2 cup egg whites
  • 1 small onion (sliced thinly)
  • 1 garlic clove (chopped)
  • 1 teaspoon ginger (chopped)
  • 1 tablespoon chili garlic sauce
  • 1 cup sliced mushrooms
  • 1 cup shredded carrots
  • 1 cup chopped broccoli

Procedure:

  1. In a large frying pan, cook chicken breast over medium heat. Stir occasionally for 5 minutes until lightly brown. Transfer in a bowl and set aside.
  2. Put your onions, garlic, carrots and mushrooms in the same frying pan and cook for 2 minutes over high heat. Add your ginger and broccoli and cook for another 2 minutes. Constantly stir.
  3. Remove from heat then add your chili garlic sauce into the mix. Transfer everything in a bowl with the cooked brown rice.
  4. Cook your egg whites in the frying pan over medium heat. Stir it constantly. Once cooked, add your cooked brown rice with vegetables, as well as the chicken. Mix very well
  5. Turn off the heat and serve.

Brown Rice with Thyme and Mushrooms

Ingredients:

  • 2 cups cooked brown rice
  • 2 cups mushrooms (sliced)
  • 1 small onion (chopped)
  • 1 teaspoon fresh thyme
  • 1 14.5-ounce can of white beans (drained and rinsed)
  • 1 teaspoon of canola or olive oil
  • Salt and pepper to taste

  1. In a medium-sized frying pan, add your oil and sauté your onions over medium heat.
  2. After about 3 minutes, throw in the pepper, mushrooms and thyme. Cook everything for about 5 minutes or until the mushrooms have darkened a bit.
  3. Add your beans and brown rice into the mix. Cook for a couple of minutes, stirring occasionally.
  4. Once done, remove from heat and serve.

Brown Rice and Black Beans

Ingredients:

  • 2 cups cooked brown rice
  • 15-ounce can of black beans (drained and rinsed)
  • 14-ounce can of diced tomatoes (low sodium)
  • 4 garlic cloves (grated)
  • 1/2 cup of red onion (finely diced)
  • 1/2 teaspoon of cumin seed
  • 1/4 teaspoon of red pepper flakes
  • 1 teaspoon of cilantro (chopped)

Procedure:

  1. In a frying pan, cook your garlic and red onions over medium heat.
  2. After about 3 to 4 minutes, throw in the cloves, cumin seed, red pepper flakes and cilantro. Cook until the kitchen fills with their fragrance.
  3. Add your tomatoes and black beans. Cook for about 20 more minutes. Remember to stir occasionally.
  4. Remove from heat once done. Add in your cooked brown rice and stir. Serve.

Italian Chicken Rice

Ingredients:

  • 2 cups cooked brown rice
  • 2 cups red and green peppers (chopped)
  • 1 pound of chicken breast (skinless and cut into chunks)
  • 1 chicken bouillon cube (dissolved in 1 3/4 cup boiling water)
  • 1/2 cup of fat-free Italian dressing
  • 1 tablespoon Dijon mustard

Procedure:

  1. In a large frying pan, combine your Italian dressing and Dijon Blend very well.
  2. Turn on the burner to medium heat. Add in your chicken chunks. Cook chicken for about 5 minutes or until lightly browned.
  3. Throw into the mix your dissolved chicken bouillon cube and peppers. Stir, cover and simmer for about a couple of minutes.
  4. Stir in your cooked brown rice and allow to simmer for another 5 minutes or until the rice is very tender.
  5. Remove from heat and let it stand for about 5 minutes to let the brown rice absorb some of the liquid. Serve.
