1. Baked Sweet Potatoes with Avocado Mash.
Split a baked potato and fill it up with ½ of mashed ripe avocado. Top it with a dollop of plain yogurt, pepitas, and cilantro leaves. Season it with pepper and salt and serve with wedges of lime.

2. Avocado Chicken Salad.
Get a bowl and in it combine 2 tablespoons of plain yogurt, 1 tablespoon of lemon juice, 2 tablespoons of diced shallots, 1 diced ripe avocado, 1 teaspoon of fresh tarragon and 1 ½ cups of shredded chicken. Serve the salad over greens.

3. Avocado Mint Pops.
Whisk together a tablespoon of honey and a cup of plain yogurt in a small bowl. Get another small bowl then mash up a ripe avocado with a tablespoon of honey and 2 teaspoons of lime juice. Layer the mixture into 4 (3 ounce) pop molds then pop into the freezer until they become firm.

4. Egg and Avocado Tartines.
Mash 1 ripe avocado and spread it onto 2 pieces of toast made from whole grains. Top it with 3 scrambled eggs and sriracha sauce.

5. Chocolate, Coconut, and Avocado Pudding.
In your blender, combine ¼ cup of cocoa powder, ½ cup of unsweetened coconut milk, 2 ripe avocadoes, and ¼ cup of maple syrup. Blend the ingredients until they are smooth. Serve with unsweetened coconut on top.

6. Avocado Pineapple Salad.
Top the arugula leaves with diced avocado, mint leaves, diced pineapple, and chopped scallions. Drizzle with olive oil and lemon juice while seasoning it with ground cumin, pepper, and salt.

7. Banana, Kale, and Avocado Smoothie.
In your blender, combine 1 cup of kale leaves, stemmed and torn, 1 to 2 tablespoons of honey, ¾ cup of orange juice, 1 ripe avocado, 1 banana, and 1 heaping of ice cubes. Blend the ingredients until smooth.

8. Avocado-Cardamom Lassi
Combine ¾ cup of plain yogurt, 2 tablespoons of honey, ¼ to ½ teaspoon of ground cardamom, 1 ripe avocado, 1 ¼ cup of milk, and 2 tablespoons of lime juice. Blend them until smooth.
