Chilled Cucumber Avocado soup

Ingredients:
Freshly ground pepper
3/4 teaspoon of salt
2 cups of cold soymilk
1 small to medium sized, peeled and minced shallot
2 medium sized ripe, seeded, and scooped out avocados
1 large cold cucumber, peeled and seeded, roughly chopped

Directions:
1. In a food processor or blender, place all the ingredients and pulse until the mix becomes smooth.
2. Get serving bowls and pour the mixture into them.
3. Garnish the serving with cilantro and chopped scallions.
4. Serve immediately.
