Ingredients:

2 medium-sized eggplants 

4 medium-sized eggs 

4 cups of prepared spaghetti sauce 

2 cups of Italian cheese blend (shredded) 

1 1/2 cups of panko bread crumbs 

1/3 cup of parmesan cheese (grated) 

2 tablespoons of Italian herb seasoning 

2 tablespoons of olive oil 

2 teaspoons of sea salt 

2 cloves of garlic (minced) 

1 medium-sized onion (diced) 

Cooking spray

Directions:

-Have the eggplants peeled. 

-Slice them up crosswise, each piece measuring about a quarter of an inch thick. 

-Place eggplant slices on several layers of paper towels. Sprinkle sea salt on them. Let stand for half an hour. 

-In the meantime, get the oven preheated to 200°C (equivalent to 400°F). 

-Reach for a mixing bowl and beat the eggs in it.

-In a shallow bowl, combine panko bread crumbs and Italian herb seasoning. 

-One by one, dunk eggplant slices in beaten egg, and then cover with panko breadcrumb mix. 

-Place each covered eggplant slice on a large baking sheet with a light coating of cooking spray. 

-Bake the slices of eggplant for 2 to 3 minutes. 

-Flip over and then bake the other side for another 2 to 3 minutes. 

-Transfer the baking sheet onto a wire rack and turn the oven to 175°C (equivalent to 350°F). 

-In the meantime, heat olive oil in a skillet over medium heat. 

-Cook minced onion and diced garlic for 5 minutes or until onion is translucent. 

-Stir in prepared spaghetti sauce. Switch off heat. 

-In a medium-sized baking dish, spread about 1/3 of the spaghetti sauce. 

-Place half of all the eggplant slices neatly in the baking dish. 

-Cover with half of the shredded Italian cheese blend. 

-Also put on top half of the grated parmesan cheese. 

-Neatly arrange the remaining slices of eggplant over the toppings. 

-Spread the remaining spaghetti sauce on top of them. 

-Add the remaining shredded Italian cheese blend, followed by grated parmesan cheese. 

-Put the baking dish in the oven and bake for about 30 minutes, or until the cheese topping bubbles. 

-Once cooked, allow to stand on the counter for about 10 minutes. 

-Serve.
