Grilled Zucchini Hummus Wrap

During the warm months, zucchini is almost always a staple at many farmers’ markets and grocery stores. If you are dieting, then zucchini can be your new best friend. Topping at only 21 calories per cup, zucchini makes for a great addition to a weight-loss achiever’s calorie-controlled diet. Thanks to its phytonutrients and other mineral contents, this veggie can boast of a rich nutritional profile.

For those who are not yet familiar with hummus, it is a kind of spread or dip that’s made from mashed chickpeas mixed with olive oil, salt, lemon juice and garlic. For a different take on zucchini, try doing this recipe for grilled zucchini hummus wrap:

Ingredients:

Zucchini ( 1 whole)
Salt and pepper ( 1 pinch)
Olive oil ( 1 tbsp)
Gluten-free tortillas (2 whole pieces)
Red onions (1/ 8 cup; sliced)
Hummus (4 tbsp)
White cheddar (2 whole slices)
Kale (1 cup, stems removed)
Tomato ( 1 whole; sliced)

Preparation:

Heat a grill or skillet over medium flame.

Discard the ends of the zucchini and slice the remaining parts lengthwise into strips. Add olive oil and a sprinkle of salt and pepper; toss afterwards.

Place your sliced zucchinis directly into the grill and cook it for around 3 minutes; turn it over and then cook the other side for 2 more minutes. Set aside when done.

Place your tortillas on the grill for about a minute or until the grill marks are made visible on the tortillas.

Remove the tortillas from the grill and start assembling your wraps. To create your tortilla wraps; add one slice of cheese, 2 tablespoons of hummus, zucchini slices, half a cup of kale, and tomato plus onion slices on each. Wrap tightly and start enjoying immediately.
