Health Benefits of Carrots and Sample Recipe

Commonly link as rabbits’ favorite food, carrot is one of the famous root vegetables in the market. Available in various colors like orange, yellow, white, red, purple, and black, carrots are native to Europe and in the southwestern part of Asia. Aside from its use in various cuisines across the globe.


Carrots are popular for vitamin A, one of the fat-soluble vitamins, with vitamin D, E, and K, being the other three. School and books taught people that vitamin A primarily functions for the eyesight. It improves and develops the parts of the eye, which means eye disorders are highly prevented.

As per Duke ophthalmologist Jill Koury, as cited by Medical News Today, vitamin A deficiency leads to the deterioration of the outer segments of the photoreceptors of the eye, which leads to further visual damage. According to Koury, foods that are rich in beta carotene are capable of correcting the vitamin deficiency, which then restores vision. As per some studies, it was found that many people improved their vision through eating carrots; however, this may not be the prime factor if they have an existing deficiency of the vitamin.

It is further revealed that carrots are the secrets of the British Royal Air Force during second World War. As per reports, the Air Force made an advertising campaign, which claimed that carrots were responsible for their pilots’ clear and sharp vision. The one responsible for the pilot’s accuracy was reportedly Britain’s new radar system; however, the rumor is still recognized at present.

Carrots also promote cardiovascular health. According to Organic Facts, carrots can reduce high blood cholesterol levels, which increase the risk of developing various heart diseases. As per the publication, Wolfson Gastrointestinal Laboratory researchers in Edinburgh, Scotland found that consuming seven ounces of carrots everyday for three weeks results to a decline of cholesterol levels by 11 percent. In another study conducted in Italy, it was found that people who ate more carrots had one-third as high a risk of having heart attack as opposed to those who consumed less carrots.

Blood pressure-related cardiac disorders can also be prevented by eating carrots. According to Organic Facts, carrots are also rich in potassium, which is known as a vasodilator; this means that it can widen the blood vessels, allowing enough blood to flow in them. This also suggests that potassium can boost blood flow and circulation, improving oxygenation and nutrient absorption to all body organs and systems. In addition, decreasing the blood pressure will reduce the workload of the heart, preventing its enlargement.

Sample Recipe

Carrot Salad with Honey-Lemon Dressing is assumed as a great recipe for carrots, since the orange vegetable is joined by celeriac or celery root, honey, and lemon. As per Eating Well, the ingredients include two cups of shredded carrots, a cup of peeled and shredded celery root, one-fourth cup of golden raisins, one-fourth cup of chopped walnuts, two tablespoons walnut oil or canola oil, two tablespoons lemon juice, a tablespoon of honey, one small shallot, salt, and pepper.

To prepare, oil, honey, lemon juice, salt, pepper, and shallot are mixed in a large bowl. Then, the carrots, raisins, walnut, and celery root are added and are tossed to combine. A good practice is peel the celery root’s skin with a knife or vegetable peeler three times to remove the fibrous skin.

Overall, carrots are good for the whole body, not only for the eyes, with its vast health benefits. Therefore, adding carrots to several meal recipes for the week will promote the health of the entire family and will prevent them from becoming ill.
