Prawn, Grapefruit & Avocado Salad

What healthy way to start the day than with a healthy salad? And what better way to make salad than choosing the perfect ingredients to do it?

Grapefruit, as a citrus fruit, is rich in Vitamin C which helps maintain a healthy immune system. As a result, the body has a strong protective immune system. Avocado, on the other hand, also contains the same vitamin plus healthy fats and protein as well as dietary fiber.

Combining these two would make a power-packed salad. Here’s the recipe for one of them.

What you need:

  • 3 tablespoon Thai sweet chilli sauce
  • 1 200-gram bag of large prawns, cooked or defrosted when frozen
  • 4 Little Gem lettuces
  • 2 avocados
  • 1 large pink grapefruits
  • 1 tablespoon olive oil
  • 1 medium rustic loaf, torn into big chunks

Preparation:

Pre-heat the oven to about 220°C. Put the bread chunks on a baking sheet then drizzle 2 teaspoons of oil. Then, rub in, season and bake for about 10 minutes or until golden and crisp.

While waiting for the croutons to bake, peel the grapefruit and cut out the segments. Put them all in a bowl. Then juice one of the grapefruit segments and put what you were able to extract on a smaller bowl. Then, prepare the avocado by peeling, stoning, and slicing it into medium-sized pieces. After doing this, separate the leaves of the lettuce and arrange it alongside the prawns.

Combine and mix the sweet chilli sauce, grapefruit juice and the remaining oil to make the dressing. Add seasoning to taste.

After confirming that the croutons are fully baked, set them aside for a few minutes or until they cooled. Afterwards, combine the rest of the salad. Distribute in plates and drizzle with just enough of the sweet chilli dressing before serving.
