Recipe for Making Eggless Egg Noodles

Eggless egg noodles are not really that difficult to make in your very own kitchen. All you need to have is enough patience and of course a pasta machine. Once you have these two, producing your very own vegetarian egg noodles should be a breeze, allowing you to come up with just about any Asian egg noodle treat that you can imagine.

Most traditional egg noodles from Asia are made using potassium carbonate or lye water. But since not everyone has access to them or some people simply don’t want them around, the recipe for making eggless egg noodles below requires none of it. Instead, baking soda which is a modern-day equivalent will be used.

Once you are done making your very own vegetarian egg noodles, you may start cooking them right away — it will only take around 3 minutes for them to cook in briskly boiling water. Or you may hang them or turn them into balls, and allow to air dry. Once completely dry, you may stash them in airtight containers until you’re ready to use them.

So without further ado, here’s the recipe for making eggless egg noodles:

Ingredients:

1 pound of all-purpose flour (you may also go for the gluten-free variant) 

1 tablespoon of cornstarch 

1/2 teaspoon of baking soda 

1/2 teaspoon of sea salt 

1 cup of water

Directions:

-In a large mixing bowl, combine all-purpose flour, cornstarch, baking soda and salt. Stir the ingredients very well. 

-While still stirring, add water little by little. The goal is for you to end up with dough that is stretchable, keeping in mind that it’s not too wet and not too dry either. To come up with the perfect dough, you may add a little water or throw in a little all-purpose flour as needed. 

-Once the dough is hard to mix, start using your clean hands. Afterwards, divide dough into 8 equal pieces. 

-Following the manufacturer’s directions, turn each piece of dough into eggless egg noodles using your pasta machine. If you don’t have a pasta machine, fret not. That’s because you may simply slice the dough thinly using a sharp knife. It’s going to require more work than simply using a pasta machine, but it will definitely add tons of excitement to making eggless egg noodles!

That’s it — you’re done making your first batch of eggless egg noodles. Just like what’s mentioned earlier, you may start cooking your vegetarian egg noodles in briskly boiling water, or allow them to air dry for later.
