Ingredients:

2 400-gram cans of chopped tomatoes

1 400-gram can of red kidney beans (drained and rinsed)

2 cups of soy mince (frozen)

1 cup of vegetable stock

1/2 cup of red lentils (dried)

3 cloves of garlic (peeled and minced)

2 red bell peppers (chopped roughly)

2 medium-sized carrots (peeled and chopped finely)

2 celery stalks (chopped finely)

1 large onion (red and sliced thinly)

2 tablespoons of extra virgin olive oil

1 teaspoon of chili powder

1 teaspoon of ground cumin

  • Salt and pepper

Directions:

-In a large saucepan, have your extra virgin olive oil heated using medium heat. 

-Sauté your red bell peppers, carrots, celery, onions and garlic for a couple of minutes or until soft. 

-Throw into the mix your chili powder and cumin. Add a dash of salt and pepper. Stir very well.

 -Pour into the saucepan your vegetable stock. 

-Follow it by adding your chopped tomatoes, red kidney beans, lentils and soy mince. Stir very well. 

-Allow the mixture to boil and simmer for about 25 minutes. 

-Transfer to a serving bowl and place on the table to delight up to 6 people!
