Ingredients:

3 medium-sized eggs

1/2 kilograms of asparagus (trimmed)

1 head of romaine lettuce

2 tablespoons of rice vinegar

1 tablespoon of chives (fresh and snipped)

1 teaspoon of crushed red pepper

1 teaspoon of olive oil

1/2 teaspoon of brown sugar

Spring roll wrappers

Directions:

-Thoroughly wash asparagus and cut them into 4- to 5-inch pieces. 

-Grab a saucepan. Fill 3/4 of it with water and bring to a boil. 

-Once boiling, cook asparagus in it for about a minute. 

-Drain, rinse with cold water, and then drain again. 

-In a mixing bowl, combine rice vinegar, brown sugar and crushed red bell pepper. 

-Add asparagus in the mixture. Toss and let stand for about half an hour. 

-Meanwhile, place eggs in a bowl and beat. Add chives and beat once more. 

-Cook in a skillet using olive oil.

-Allow to cool for a while and slice into thin strips. 

-Grab a spring roll and place a piece of romaine lettuce with the rib removed. 

-Place 4 to 5 pieces of cooked asparagus. Toss in a strip of cooked egg, too. 

-Wrap and transfer to a serving plate. Repeat until you have used up all the asparagus. 

-Serve with your favorite dipping sauce.
