Kale and Apple Salad : Healthy Recipe

Eating kale, a dark green leafy vegetable, is beneficial for the human body because it is rich in antioxidants, especially when eaten raw. Since the era of the Romans, kale had been a favorite among vegetables in Europe because of its low-calorie, high-nutrient content.
According to experts, this vegetable contains about 3 grams of protein and 2.5 grams of fiber which helps with the digestion, manage your blood sugar and is a perfect addition to your weight-loss diet because it helps make you feel full. Because it contains folate, it is also considered a great vegetable to feed pregnant women.
Meanwhile, its lutein and zeaxanthin content helps prevent eye ailments such as cataracts and macular degeneration. It is also rich in omega-3 fatty acids known as the alpha-linolenic acid that can also be found in fish. Kale is also rich in Vitamins A, C and K as well as minerals like phosphorus, calcium, zinc and potassium.

Ingredients:
• 2 tablespoons extra-virgin olive oil
• Kosher salt
• 3 tablespoons freshly squeezed lemon juice
• 1 bunch kale, ribs removed, leaves sliced thinly
• 1 Honeycrisp apple
• ¼ cup dates
• ¼ cup slivered almonds, toasted
• Freshly ground black pepper
• 1 ounce pecorino
Preparation:
Combine the lemon juice, ¼ teaspoon salt and olive oil in a big bowl. Toss in the kale to coat and let stand for 10 minutes.
Then, slice the dates into thin sizes while the apples into matchstick sizes. After doing this, add these two in the mixture together with almonds and cheese. Add salt and pepper to taste.
This recipe yields 6 servings.
